Fried dumpling

  When farm’s season, fried dumpling is the most food for people, it’s not just save time and simple material, but also delicious, especially welcomed by people. Only need to use hand to press the paste to thin like a cake shape, and paste them on the edge of the boiler, boiler covered on, braise about 6-7 minutes to eat, this is “oat’s fried dumpling”, rip the dumpling into small pieces in the bowl and put in soup, together with spicy, salt leek, garlic, very delicious, and very welcomed by people.

 Yam fish

  Yam fish is made by yam (potato) oat, clean the potato and cook it, then take off the husk, and use press machine to make it to mashed tomato, then put some oats wheat in and knead hardly, till mashed tomato wouldn’t be stained with hand, (if still feel stained, maybe because lack of oat’s wheat). Then put the pasta on the table and separate to small piece and make them to fish shape, then it’s “Yam fish”. Put all small “fish” in to the boiler to braise, then dipping eat with cooked mushroom soup, mutton soup, egg soup or lime soup, it helps on reduce high blood pressure, resist anti-oxidation, reduce blood sugar etc., it’s the regular food for people who lived out of great wall, and very popular here.

 Dumpling

  Oat’s dumpling’s modus operandi is use oat’s wheat and yam powder, put in some water and whisk to make to a pasta, need to add some alum, the pasta should neither stiff nor too soft.   Have to knead the pasta very flexible, and separate the pasta to same size small pieces, and use rolling pole to roll to a round shape, put the stuffing on the middle and pinch the edge together, then put them in the boiler and braise for 10 minutes, after that a basket of delicious oat’s dumpling is done, then according personnel’s like, to concoct the soup, mostly is mashed garlic with vinegar, enjoy it!

  Mo Ca Ca

  Mo Ca Ca is the yam (potato) take off the husk and mill it to powders in a basin, and add in some oat’s flour and mixed, add in a little amylum (the the mo Ca Ca after braise will be more bright and nice), after mixed, use the scoop take some and put on the braise boiler quickly, and make out ranks of Mo Ca Ca, then put them in a heated water boiler to braise for 10 minutes. And according your taste to arrange some vegetable soups with it, color and taste are very special with nice shape, exquisitely carved. People like this food very much since good smell and tastes, afford for thought.

Kui Lei

    First need to knead the flour with cold or warm water (a bit stiff), and separated to some small pieces. Then go to rub the pasta, prepare a braise boiler, and a textile covered, used the miller break those small pieces oat’s flour and fall off the textile ( leave empty in the middle, in order to let the water drop off the end of the boiler). Then is braise the flour, put 2 cups of water inside the boiler, covered to braise for about 10 minutes, then you will smell the oat’s taste. The last step is stir-fry the flour, put the braised flour into a empty boiler, and put some oil on the bottom of the boiler, add salt, shallot, pepper etc. (according to your taste), and then start to stir-fry, until the color change to gold, then use a scoop take out flour in to a small basin to eat.
